Shredded Chicken Tortilla Soup
1 onion, diced
1 bell pepper, diced
1 tsp oil or butter
1 jalapeno / or serrano
2 cloves garlic, minced
1 28oz can diced tomatoes w/ liquid
1 15oz can black beans, drained & rinsed
1 28oz can hominy, drained & rinsed
1 32oz carton chicken broth/stock
2 tsp chilli powder
2 tsp cumin
1 tsp oregano
1 tsp smoked paprika
½ tsp cayenne
2 chipotle peppers with adobo sauce
1 bay leaf
1/3 cup cilantro & stems, chopped
Meat from 1 rotisserie chicken or poached chicken (3)breasts / (6)thighs
Serve with lime wedge, avocado, cojita cheese & tortilla chips/ fried tortilla strips

5-7 lbs brisket, fat trimmed off & cut into cubes
